Dal Roti

As I told you, I don’t like to have Roti & dal ... So most of the times dal remains. Here is one more thing that you can do with leftover dal.

Ingredients :

Leftover Dal – 1 cup

Wheat flour – 2 cups

Ginger ,garlic & green chilli paste – ½ tsp

Turmeric powder – ¼ tsp

Salt as per taste

Oil – ½ spn

Water to knead the dough

Oil for making roti

 

Method:

1)    Mix the dal with wheat flour, add salt, turmeric pwd, ginger garlic paste & knead to make a soft dough

2)    Cover the dough & let it rest for atleast 15 minutes.

3)    Now take a portion of dough & roll to a round disk (or whichever shape it comes to ;)

4)    Put this roti on hot tawa. When one side is cooked ,flip the roti & sprinkle some oil.

5)    Let the roti cook fully. Remove from tawa & serve hot with Pickle & raita.

You would get a nice & soft roti which will be nutritious & yummy at the same time J

Rice Pakoda

Rice Pakoda

As delicious as any other pakoda J Just try them out...

Ingredients :

Cooked rice – 1 cup  

Gramflour   2-3 tbsp

1 big onion chopped finely

Fennel seeds – 1/4tsp

Chilli Powder – ¼ tsp

Turmeric Powder – 1/8 tsp

Salt for taste.

Curry leaves

Oil for deep frying

Method :

1)    Take the rice in a big bowl. To it add the chopped onions & curry leaves, spices, gramflour , salt & 2 tsp of oil & mix them

2)    Now slowly add some water to make the pakoda batter. Should be thick & of falling consistency

3)    In a frying pan add oil & heat it.

4)    Drop the pakoda batter in oil using your hand.Deep fry the pakodas till golden brown in color.

5)    Serve hot with tomato ketchup.

 

Note : 1) You can add green chillies instead of chilly powder
2) You can mash & add some paneer to the pakoda batter. It will taste good.
3) You can add spinach,fenugreek leaves etc to the batter to make pakodas.
4) Add enough gramflour to bind the rice with onion & other spices.

Dal dhokli

Dal Dhokli

I never liked having dal & roti ...So most of the time i would just skip having my dinner.. Then my mom started making this dal dhokli just for me..Though i didn’t like to have roti & dal i definitely loved this dal dhokli. Usually my mom makes this with the leftover dal from the lunch. My nephew named this dish as Indian Pasta J

 Ingredients :

Dal – 1 cup

Chapati Dough – for 3 chapathi

Water – 3 cups

1 onion

Ajwain – 1 spoon

Hing a pinch

Chilli Powder – ¼ tsp

Cumin Powder – ¼ tsp

Salt for taste.

Butter / ghee for serving

Coriander leaves for garnishing

Method :

1)    In a big kadai / saucepan add a tsp of oil. Let it heat then add the ajwain.

2)    After ajwain splutters add the onion & fry till translucent. Add hing & sauté.

3)    Then add the dal & all the spices & water & let it cook on simmer.

4)    Meanwhile roll the chapatti dough into a round disk & cut them into 1 inch squares & put then in to the dal.

5)    Let them cook till the mixture turns into thick consistency & the chapati dough is cooked with the dal really good.

6)    Take this dal dhokli in a bowl , add a dallop of ghee & garnish with coriander leaves & serve hot.
Note

1) Instead of Ajwain you can add cummin seeds. It will still taste as good.
2) My mom used to  add some sambhar powder too. But i like it without them.
3) You can add some ginger - garlic paste while sauteing onions.

Khuskura / chapati upma

Makeover Recipe – 6

Khakra / Crisp Chapati

You can transform your dinner/lunch to your snacks. This is how you can make it happen..

Ingredients :

·         Chapati / Paratha (whichever is left)

·         Oil a few tsp

Method :

1)     Heat chapati pan on slow flame.

2)    Put the chapati/paratha on the pan ,add few drops of oil & let it get crisp on both the sides.

3)    Keep pressing the chappati with cloth or any flat spatula continuosly to avoid it puffing up.

4)    You can store this khakra in air tight container for a week.

Serving suggestion

1)    Apply little ghee all over the khakra & sprinkle salt & chilli powder/chat powder & serve.

2)     Top it with tomatoes ,onions ,sev & freshly cut coriander leaves & maybe some chutney of your choice to make a masala khakra.

3)     Serve with pickle of your choice.

Rice & cheese balls

Rice & cheese balls
This is simply delicious & everbody will love it
Ingredients :
·         Boiled rice – 1 Bowl
·         1 medium onion chopped finely
·         4-5 chillies chopped finely
·         Gram flour/Besan – 1 tbsp (for binding)
·         Cheese cubes
·         Garlic powder – ¼ tsp
·         Salt – adjust to your taste
·         Oil – To fry
Method :
1.    Take rice in a large bowl , add chillies, onion, gramflour,salt , garlic powder & mix it with rice well.
2.    You can use little water if the rice is too dry to mix everything to form a stiff dough.
3.    Take lemon sized amount of this rice dough roll it in you hand to make patty shape
4.    Press in the middle of the patty & stuff with cheese cube & roll it again to form a ball.
5.    Make the balls with remaining dough.
6.    Deep fry these balls & serve hot with sauce of your choice
Note :
1)    You can add turmeric powder / sauce etc to your dough to give it color. It’ll taste good too
2)    Instead of stuffing the cheese you can shred the cheese & mix it with dough itself & make balls & fry
3)    Try stuffing paneer , potato subji etc according to your imagination.

4)  Instead of kneading the gramflour with rice, you can make seperate batter with gramflour , dip the rice ball in gramflour & then fry. just as you do for bonda.

Quick Spiced Rice

Quick Spiced rice

When I was in school we used to share our lunch boxes. One of my friends used to bring this spiced rice that really used to be yummy. This recipe is her courtesy. Its a quick fix meal.

Ingredients :

·         Boiled rice – 1 Bowl

·         2 medium onions chopped finely

·         1 tomato roughly chopped

·         1 chilli chopped finely

·         Garlic – 1 chopped finely

·         Turmeric powder – ¼ tsp

·         Chilli powder -  1tsp

·         Coriander powder – ½ tsp

·         Cumin – ½ tsp

·         Mustard – ½ tsp

·         Hing/asafoetida – a pinch

·         Salt – adjust to your taste

·         Oil – 2 tbsp

Method :

1.    Take rice in a large bowl , add chilli powder, coriander powder, turmeric powder, salt & mix it with rice well. However do not break the rice while mixing.

2.    In a kadai add oil. When oil is hot put the mustard & let it splutter.

3.    Then add the cumin seeds & let it crackle. Add hing.

4.    Add the onions,garlic & green chilli. Fry till the onions are translucent.

5.    Add the tomato & sauté well for 2 minutes.

6.    After onions & tomatoes are cooked, add the rice that has been mixed with spices & mix well with the onion tomato mixture.

7.    Switch off the heat after a minute. Serve hot with raita of your choice.

Note :

1)    You can skip the tomatoes if you don’t like. I personally don’t like tomatoes in this recipe.

2)    You can add other vegetables also to enhance this recipe.

3)     You can add fried bread pieces for decoration

4)     This recipe is very spicy. You can reduce the amount of chilli powder to your taste.

 

Upma patties

Upma Patties


My family is unique... I have heard lot of the people saying "who'll eat upma ? its so blunt & tasteless"... But in my family everybody loves Upma & they wont mind having it everyday too...

So you may ask how I ended up making something with Upma ??!! well once I had made a  whole lot as i was expecting some guests , who didnt turn up. That's how I ended up making something else with Upma.

Lets see how to make this simple & tasty dish

Ingredients :

  • 1 cup – Vegetable Rava upma
  • 1/4 cup – Corn flour / Besan (kadalai mavu/gram flour)
  •  1 medium potato boiled & mashed
  • Salt and pepper as needed
  • Coriander leaves for garnishing
  • Oil for shallow fry

  • Method :

    1) Mix flour, salt & pepper with  water to make runny batter
    2) Mix the upma with boiled & mashed potato & adjust salt for the potato added.
    3) Now take a tennis ball sized mix, & make patties with them
    4) Dip in the flour batter & fry them on both sides till golden in colour
    5) Serve with sauce or green chutney.

    Note :
    1) You can use normal upma without veggies also to make this patty. If using vegetable less upma then add 1/2 cup mixed mashed vegetables to 1 cup upma & then make.
    2) You can make without vegetables also...It'll still taste good. :)
    3) After dipping in batter ,you can dip in bread crumbs too, to make it even crispier.
    4) You can shallow fry or even deep fry them.

    LEFTOVER MAKEOVER !!!


    Why Leftover makeover ???!!


    Well before answering that question let me introduce myself.
    This is Padma here from Chennai (India). I always wanted to create a blog and this is my starting of this wonderful journey...

    This blog which I'm creating is out of my experiments & experiences with food. Many a times it so happens that we cook more food than required & we don't know what to do with the leftover.

    Sometimes we give away the food maybe to the housemaid or a needy, but most of the time we don't get people to give it away & we waste it.

    This blog is basically for making over delicious new thing from the leftovers... Yes!!!, you heard it right. That's why I named the blog "Leftover Makeover".

    I am a foodmaniac & I like to try new recipes & food outside. Let me confess, I love eating & I dont like to waste food, be it at home or otherwise. My friends say that you miss many delicious things as you are a vegetarian, but my answer to them has always been "Am happy with what I am & we too have lot of options".I try them out & of course try on near & dear ones as well (most of the time on others :) ) and they have turned out good.

    From now on I would like to share my ideas with you .. They may not be new but yes they will remind you of many things which you can do with food...Lets start then




    Makeover recipe - 1 Makeover Kheer

    Let me start with something sweet.
    This is festival time.. & everybody would be making some or the other sweets like ladoo,kaju katli,badam katli etc. etc. but after a few days you would be bored having these sweets.. What do you do ? 

    Well lets see 

    Ingredients : Serves 2-3

    Boondi Ladoo - 2
    Kaju katli - 4-5
    Pista rolls - 4-5
    Milk - 1 litre
    Dry fruits of your choice to garnish

    Method :

    1) Crush the ladoo to make boondi, & grind the remaining sweets to coarse paste
    2) Boil the milk till it becomes 3/4 of a litre. then add the ground sweets  & demoulded ladoo to it.
    3) let it boil till the sweets mix well i.e for around 5 minutes.
    4) Remove from heat and garnish with dry fruits of your choice.

    Your leftover sweets have now turned to delicious new kheer avatar.

    Note : You don't need to add sugar as the sweets already contain enough sugar in them.But you can adjust to your taste.
