Quick Spiced Rice

Quick Spiced rice

When I was in school we used to share our lunch boxes. One of my friends used to bring this spiced rice that really used to be yummy. This recipe is her courtesy. Its a quick fix meal.

Ingredients :

·         Boiled rice – 1 Bowl

·         2 medium onions chopped finely

·         1 tomato roughly chopped

·         1 chilli chopped finely

·         Garlic – 1 chopped finely

·         Turmeric powder – ¼ tsp

·         Chilli powder -  1tsp

·         Coriander powder – ½ tsp

·         Cumin – ½ tsp

·         Mustard – ½ tsp

·         Hing/asafoetida – a pinch

·         Salt – adjust to your taste

·         Oil – 2 tbsp

Method :

1.    Take rice in a large bowl , add chilli powder, coriander powder, turmeric powder, salt & mix it with rice well. However do not break the rice while mixing.

2.    In a kadai add oil. When oil is hot put the mustard & let it splutter.

3.    Then add the cumin seeds & let it crackle. Add hing.

4.    Add the onions,garlic & green chilli. Fry till the onions are translucent.

5.    Add the tomato & sauté well for 2 minutes.

6.    After onions & tomatoes are cooked, add the rice that has been mixed with spices & mix well with the onion tomato mixture.

7.    Switch off the heat after a minute. Serve hot with raita of your choice.

Note :

1)    You can skip the tomatoes if you don’t like. I personally don’t like tomatoes in this recipe.

2)    You can add other vegetables also to enhance this recipe.

3)     You can add fried bread pieces for decoration

4)     This recipe is very spicy. You can reduce the amount of chilli powder to your taste.
